  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil
  • 4 cups thinly sliced potatoes
  • 1 small onion thinly sliced
  • 2 cups shredded cheddar cheese, divided
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 2 tbsp butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork chops with salt, black pepper, garlic powder, and onion powder.
  3. In a large skillet, heat olive oil over medium-high heat and brown the pork chops for about 3-4 minutes on each side. Set aside.
  4. Melt butter in the same skillet, add onions, and cook until soft, about 5 minutes.
  5. Sprinkle flour over the onions and cook, stirring for 2 minutes.
  6. Whisk in milk and chicken broth, mixing until the sauce thickens, about 5 minutes.
  7. Stir in thyme, paprika, and 1 cup of cheddar cheese until melted. Remove from heat.
  8. Grease a large baking dish, layer half of the potatoes at the bottom, then pour half of the cheese sauce.
  9. Place the browned pork chops on top, layer the remaining potatoes, and pour the rest of the cheese sauce.
  10. Top with remaining cheddar cheese and cover the dish with aluminum foil.
  11. Bake for 45 minutes, remove the foil and bake for another 15 minutes until golden and bubbly.
  12. Let it rest for 10 minutes before serving, garnishing with fresh parsley if desired.

Notes

Slice the potatoes evenly for consistent cooking. You can add veggies like spinach or mushrooms for extra nutrition.
