Ingredients
2 cups cooked shredded chicken
6 cups chicken broth
1 cup sourdough discard
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 tbsp butter, melted
1 carrot, diced
2 celery stalks, diced
1 onion, diced
2 cloves garlic, minced
Fresh herbs (thyme, parsley)
Salt and pepper to taste
Instructions
1. In a large pot, sauté onion, carrot, celery, and garlic in butter until softened.
2. Add chicken broth and bring to a simmer.
3. Stir in shredded chicken, salt, pepper, and herbs.
4. In a bowl, whisk flour, baking powder, and salt.
5. Add sourdough discard and milk, mixing gently to form a shaggy dough.
6. Drop spoonfuls of dough into simmering broth, keeping heat low.
7. Cover and cook for 15 minutes without lifting the lid.
8. Check that dumplings are cooked through.
9. Serve warm, garnished with fresh parsley.
Notes
For richer flavor, use bone broth.
Add peas or spinach for extra vegetables.
Reheat gently to maintain dumpling texture.
