Description
These sourdough discard cinnamon roll bites are the perfect sweet treat to whip up when you’ve got extra discard on hand. They’re soft, buttery, packed with a cinnamon-sugar swirl, and topped with a creamy glaze. Baked or air fried, they come together quickly and disappear even faster.
Ingredients
Dough:

1 cup sourdough discard (unfed, 100% hydration)

2 cups all-purpose flour, plus more for dusting

2 tablespoons sugar

1 teaspoon salt

1 teaspoon baking powder

1/4 cup melted butter or coconut oil

1/3 cup warm milk (dairy or plant-based)
Filling:

1/4 cup softened butter
-
1/2 cup brown sugar

1 tablespoon ground cinnamon

1/2 teaspoon vanilla extract
Glaze:

4 ounces cream cheese, softened

1/2 cup powdered sugar
-
1 tablespoon milk
-
1/2 teaspoon vanilla extract
Instructions

In a large mixing bowl, combine the sourdough discard, flour, sugar, salt, baking powder, melted butter, and warm milk. Mix until a soft dough forms. Turn out onto a floured surface and knead gently for 2 to 3 minutes until smooth. Cover and let rest for 30 minutes.

Roll the dough into a rectangle about 1/4 inch thick. Spread softened butter evenly over the surface, then sprinkle with brown sugar, cinnamon, and vanilla. Roll the dough up tightly into a log and slice into 1-inch pieces.

Arrange rolls in a greased 9-inch round baking pan, leaving a little space between each.

For the oven: bake at 375°F for 18 to 20 minutes until golden brown.
For the air fryer: bake at 350°F for 10 to 12 minutes, checking for doneness. -
While the bites are baking, make the glaze by mixing cream cheese, powdered sugar, milk, and vanilla until smooth. Drizzle over warm (not hot) cinnamon roll bites.
