Ingredients

Scale

1 cup sourdough discard

1 cup all-purpose flour

2 tbsp sugar

1 tsp cinnamon

Pinch of salt

2 tbsp melted butter

Additional sugar and cinnamon for sprinkling

Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.

2. In a bowl, combine sourdough discard, flour, sugar, cinnamon, and salt until a dough forms.

3. Roll the dough out thinly on a floured surface to about 1/8 inch.

4. Brush with melted butter and sprinkle generously with cinnamon sugar.

5. Cut into squares using a knife or pizza cutter.

6. Place on the baking sheet and bake for 15-20 minutes until golden and crisp.

7. Let cool completely before storing in an airtight container.

Notes

For extra crispness, roll the dough as thin as possible.

Re-crisp in a warm oven if they soften over time.

Try flavor variations like cardamom sugar or citrus zest.
