These sourdough discard garlic herb crackers are crispy, flavorful, and the perfect way to reduce food waste. Loaded with herbs and a hint of garlic, they’re ideal for snacking, dipping, or pairing with soups and cheeses.
Ingredients
1 cup sourdough discard (unfed)
3/4 cup all-purpose flour
2 tablespoons olive oil
1/2 teaspoon garlic powder
1 teaspoon dried rosemary or thyme
1/2 teaspoon salt (plus more for topping)
Optional: cracked pepper or parmesan
Instructions
1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
2. In a bowl, mix sourdough discard, olive oil, and herbs until smooth.
3. Stir in flour and salt. Mix until a dough forms.
4. Roll dough thin (1/8 inch) between two sheets of parchment.
5. Score with a knife or pizza cutter into cracker shapes.
6. Sprinkle extra salt or herbs if desired.
7. Bake for 20–25 minutes until crisp and golden.
8. Let cool fully. Store in airtight container.
Notes
• Swap herbs for oregano, thyme, or Italian blend.
• Add 1 tablespoon nutritional yeast or parmesan for a cheesy twist.
• Store up to 1 week at room temp in sealed jar.
