Description

Delicious and easy sourdough discard waffles that crisp up beautifully and stay tender inside.


Ingredients

  • 1 cup sourdough starter
  • 1 cup plain yogurt
  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 1 egg
  • 1/4 cup butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Combine sourdough starter and yogurt in a bowl.
  2. Stir in flour and brown sugar, stirring continuously until well combined.
  3. Cover batter. Rest in the refrigerator, 8 hours to overnight.
  4. Preheat a waffle iron according to manufacturer’s instructions.
  5. Beat egg in a large bowl.
  6. Add melted butter and vanilla extract.
  7. Stir in baking soda and salt.
  8. Add sourdough mixture.
  9. Stir until batter is well combined.
  10. Pour batter into waffle iron and cook until golden brown, about 3 minutes per waffle.

Notes

For extra flavor, let the batter rest overnight. Use thick sourdough or yogurt for best results.
