A beautiful and delicious sourdough loaf combining the earthy richness of matcha and the sweet burst of fresh strawberries.
Ingredients

- 500g bread flour
- 100g whole wheat flour
- 300g water
- 100g sourdough starter
- 1 teaspoon salt
- 1 tablespoon matcha powder
- 100g fresh strawberries, chopped
- Optional: honey or sugar to taste
Instructions
- In a large mixing bowl, combine the bread flour, whole wheat flour, matcha powder, and salt.
- Add the water and sourdough starter, mixing until a shaggy dough forms.
- Gently fold in the chopped strawberries.
- Let the dough rest for 30 minutes.
- Every 30 minutes for the next 2-3 hours, stretch the dough and fold it over itself until it has grown in size.
- Shape the dough into a loaf and place it in a proofing basket.
- Cover and let it proof for 4-6 hours at room temperature or refrigerate overnight.
- Preheat your oven to 450°F (232°C) with a Dutch oven inside.
- Transfer the loaf into the hot Dutch oven, cover, and bake for 30 minutes.
- Remove the lid and bake for an additional 15-20 minutes until golden brown.
- Let it cool completely before slicing.
Notes
For freshness, wrap the loaf in a kitchen towel and store at room temperature for up to three days. Freeze slices in a zip-top bag for longer storage.
