Description

A beautiful and delicious sourdough loaf combining the earthy richness of matcha and the sweet burst of fresh strawberries.


Ingredients

  • 500g bread flour
  • 100g whole wheat flour
  • 300g water
  • 100g sourdough starter
  • 1 teaspoon salt
  • 1 tablespoon matcha powder
  • 100g fresh strawberries, chopped
  • Optional: honey or sugar to taste

Instructions

  1. In a large mixing bowl, combine the bread flour, whole wheat flour, matcha powder, and salt.
  2. Add the water and sourdough starter, mixing until a shaggy dough forms.
  3. Gently fold in the chopped strawberries.
  4. Let the dough rest for 30 minutes.
  5. Every 30 minutes for the next 2-3 hours, stretch the dough and fold it over itself until it has grown in size.
  6. Shape the dough into a loaf and place it in a proofing basket.
  7. Cover and let it proof for 4-6 hours at room temperature or refrigerate overnight.
  8. Preheat your oven to 450°F (232°C) with a Dutch oven inside.
  9. Transfer the loaf into the hot Dutch oven, cover, and bake for 30 minutes.
  10. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  11. Let it cool completely before slicing.

Notes

For freshness, wrap the loaf in a kitchen towel and store at room temperature for up to three days. Freeze slices in a zip-top bag for longer storage.
