- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 1 cup heavy cream
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar (for strawberries)
- Whipped cream (for topping)
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix together the flour, sugar, baking powder, and salt.
- Cut in the cold butter until it looks like coarse crumbs.
- Pour in the heavy cream and stir gently until just combined.
- Turn the dough onto a floured surface. Knead gently a few times, then roll out to about an inch thick. Cut into rounds.
- Place them on a baking sheet and bake for 15-20 minutes until golden brown.
- While the shortcakes are baking, toss the strawberries with 1/4 cup sugar in a bowl and let them sit for about 30 minutes.
- Once the shortcakes are cooled, slice them in half and layer with the strawberries and whipped cream. Serve immediately.
Notes
For a delightful twist, try mixing in other berries or adding lemon zest to the strawberries.
