Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1 cup heavy cream
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for strawberries)
  • Whipped cream (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until it looks like coarse crumbs.
  4. Pour in the heavy cream and stir gently until just combined.
  5. Turn the dough onto a floured surface. Knead gently a few times, then roll out to about an inch thick. Cut into rounds.
  6. Place them on a baking sheet and bake for 15-20 minutes until golden brown.
  7. While the shortcakes are baking, toss the strawberries with 1/4 cup sugar in a bowl and let them sit for about 30 minutes.
  8. Once the shortcakes are cooled, slice them in half and layer with the strawberries and whipped cream. Serve immediately.

Notes

For a delightful twist, try mixing in other berries or adding lemon zest to the strawberries.
