- 2 cups shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 tortillas (corn or flour)
- 1/2 cup diced onion
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Chopped cilantro (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, cheese, onion, cumin, garlic powder, salt, and pepper until well combined.
- Spread some enchilada sauce on the bottom of a baking dish to prevent sticking.
- Take a tortilla, fill it with the chicken mixture, and roll it up tightly. Place seam-side down in the baking dish.
- Repeat with remaining tortillas until all are filled and in the dish.
- Pour remaining enchilada sauce over the rolled tortillas and sprinkle more cheese on top.
- Bake for 20-25 minutes until heated through and cheese is bubbly and golden.
- Garnish with chopped cilantro before serving.
Notes
Use rotisserie chicken for convenience and consider adding black beans or corn for extra texture. Adjust spices to your liking.
