A comforting and cheesy chicken enchilada recipe that’s quick and easy to prepare, perfect for family gatherings or cozy dinners.


Ingredients

  • 2 cups shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 tortillas (corn or flour)
  • 1/2 cup diced onion
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, cheese, onion, cumin, garlic powder, salt, and pepper until well combined.
  3. Spread some enchilada sauce on the bottom of a baking dish to prevent sticking.
  4. Take a tortilla, fill it with the chicken mixture, and roll it up tightly. Place seam-side down in the baking dish.
  5. Repeat with remaining tortillas until all are filled and in the dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and sprinkle more cheese on top.
  7. Bake for 20-25 minutes until heated through and cheese is bubbly and golden.
  8. Garnish with chopped cilantro before serving.

Notes

Use rotisserie chicken for convenience and consider adding black beans or corn for extra texture. Adjust spices to your liking.
