Ingredients

- 1 lb ground beef (or your choice of protein)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups beef or vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup frozen peas
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic. Sauté until fragrant and the onions are translucent.
- Toss in the ground beef. Brown it thoroughly, breaking it apart as it cooks.
- Add diced carrots and celery. Stir everything together and let it cook for about 5 minutes.
- Pour in the can of diced tomatoes and broth. Add oregano, thyme, salt, and pepper. Bring to a gentle boil.
- Reduce heat and simmer for at least 20 minutes. This lets all those flavors marry together beautifully.
- Finally, add the frozen peas. Cook for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
This dish can be served with crusty bread or over rice for a heartier meal. Great for meal prep – tastes better the next day!
