Ingredients

- 350 g warm water
- 100 g active sourdough starter
- 25 g granulated sugar
- 500 g unbleached all-purpose flour
- 11 g kosher salt
- 2 tablespoons ground cinnamon
- 135 g dark brown sugar
Instructions
- Gather your ingredients.
- Combine the warm water with your bubbly sourdough starter in a large mixing bowl. Whisk until dissolved.
- Add the granulated sugar and mix well.
- Incorporate the flour with a wooden spoon until thick.
- Use your hands to form a shaggy dough.
- Sprinkle the salt on top, cover the bowl, and let it rest for 30 minutes.
- Pinch in the salt with damp hands after resting.
- Shape the dough into a round, cover, and let rest for another 30 minutes.
- Stretch and fold the dough by lifting each side and folding it over the ball.
- Repeat the stretch and fold process two more times over 3-4 hours until doubled in size.
- On a floured surface, stretch the dough into a rectangle.
- Sprinkle generously with cinnamon and brown sugar, then roll into a boule shape.
- Place in a floured proofing basket, cover, and refrigerate for 2-3 hours.
- Preheat your Dutch oven to 450°F.
- Transfer the dough onto parchment paper, score the top, and bake covered for 25 minutes.
- Uncover and bake for an additional 18-20 minutes until golden brown.
- Let cool on a rack for at least 2 hours before slicing.
Notes
Make sure your sourdough starter is active for best results. Use fresh spices for maximum flavor.
