Ingredients

  • 1 cup sourdough starter (active)
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/4 cup raisins
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons butter (melted)
  • Cornmeal (for dusting)

Instructions

  1. Mix together your sourdough starter, milk, and sugar until combined.
  2. Gradually blend in the flour, salt, baking soda, cinnamon, and raisins until a dough forms.
  3. Knead the dough for 5-10 minutes until it’s smooth and happy.
  4. Cover it up and let it rise in a warm spot until it doubles in size—about 1-2 hours.
  5. Roll the dough out to about 1-inch thick and cut out rounds.
  6. Place the rounds on a baking sheet dusted with cornmeal.
  7. Let them proof for 30 minutes to get nice and puffy.
  8. Preheat a skillet over medium heat and cook the muffins for about 7-10 minutes on each side until they look golden brown.
  9. Serve warm, and optionally slather with maple butter!

Make sure your sourdough starter is bubbly and active; this helps the muffins rise beautifully.
