For the Dough:
1 cup (227g) sourdough discard (unfed is fine)
1 cup (120g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon sugar
2 tablespoons plain yogurt or sour cream
1 tablespoon butter, melted (for brushing)
For the Boil (optional, for pretzel texture):
4 cups water
2 tablespoons baking soda
For the Cinnamon Sugar Coating:
1/4 cup (50g) granulated sugar
1 teaspoon ground cinnamon
2 tablespoons melted butter
Make the dough: In a medium bowl, mix sourdough discard, flour, baking soda, baking powder, salt, sugar, and yogurt. Stir until a soft, slightly tacky dough forms. Knead gently for 2–3 minutes until smooth. Let rest 5 minutes.
Shape the bites: Roll the dough into a 12-inch log and slice into 1-inch pieces (about 20–24).
Optional boil: In a pot, bring 4 cups of water to a boil. Stir in baking soda (it will bubble!). Drop bites in a few at a time for 20 seconds. Remove with a slotted spoon and place on a parchment-lined tray.
Bake or air fry:
Air fryer: Preheat to 375°F (190°C) and cook bites in batches for 6–8 minutes.
