For the Dough:

  • 1 cup (227g) sourdough discard (unfed is fine)

  • 1 cup (120g) all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 tablespoon sugar

  • 2 tablespoons plain yogurt or sour cream

  • 1 tablespoon butter, melted (for brushing)

For the Boil (optional, for pretzel texture):

  • 4 cups water

  • 2 tablespoons baking soda

For the Cinnamon Sugar Coating:

  • 1/4 cup (50g) granulated sugar

  • 1 teaspoon ground cinnamon

  • 2 tablespoons melted butter

Instructions

  • Make the dough: In a medium bowl, mix sourdough discard, flour, baking soda, baking powder, salt, sugar, and yogurt. Stir until a soft, slightly tacky dough forms. Knead gently for 2–3 minutes until smooth. Let rest 5 minutes.

  • Shape the bites: Roll the dough into a 12-inch log and slice into 1-inch pieces (about 20–24).

  • Optional boil: In a pot, bring 4 cups of water to a boil. Stir in baking soda (it will bubble!). Drop bites in a few at a time for 20 seconds. Remove with a slotted spoon and place on a parchment-lined tray.

  • Bake or air fry:

    • Air fryer: Preheat to 375°F (190°C) and cook bites in batches for 6–8 minutes.

    • Oven: Preheat to 400°F (200°C) and bake for 10–12 minutes, until golden.

  • Coat in cinnamon sugar: While still warm, brush each bite with melted butter, then roll in the cinnamon sugar mix until coated.

  • Serve warm: Enjoy with your favorite dip, yogurt, or just as-is!

  • Skip the boiling step if short on time—your bites will still be soft and delicious, just a bit less chewy.
