Description
Creamy tomato basil soup made with roasted tomatoes, fresh basil, and cream for a comforting, vibrant lunch.
Ingredients
2 lbs ripe tomatoes
1 cup fresh basil leaves
1 cup heavy cream or half-and-half
1 onion, diced
3 cloves garlic, minced
2 tbsp olive oil
2 cups vegetable or chicken broth
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F. Place halved tomatoes and garlic on a baking sheet, drizzle with olive oil, and roast for 25 minutes.
2. In a large pot, sauté diced onion until translucent.
3. Add roasted tomatoes and garlic, broth, and fresh basil.
4. Simmer for 10 minutes, then blend until smooth.
5. Return to pot, add cream, and season with salt and pepper.
6. Simmer for 5 more minutes to meld flavors.
7. Serve hot with fresh basil and a swirl of cream.
Notes
For a lighter version, use half-and-half or Greek yogurt.
Add spinach before blending for extra nutrients.
Serve with toasted sourdough or a crisp green salad.
