Tender muffins made with sourdough discard, packed with sweet apple bits and cozy cinnamon flavor.
Ingredients
Scale
- 1 to 2 apples, peeled and diced
- 1 cup sourdough discard
- 1 ½ cups all-purpose flour
- ¾ cup brown sugar or white sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 eggs
- ½ cup milk or buttermilk
- ½ cup melted butter or neutral oil
Instructions
- Heat the oven to 375°F and line a muffin tin or lightly grease it.
- Peel and dice the apples into small pieces.
- Whisk the wet ingredients in one bowl until smooth.
- Stir together the dry ingredients in another bowl.
- Pour the dry ingredients into the wet, mixing until no dry flour is visible.
- Fold in the diced apples.
- Scoop the mixture into each muffin cup about ¾ full.
- Bake for about 18 to 22 minutes until tops are set.
- Let the muffins cool in the pan for about 5 minutes before moving to a rack.
Notes
For extra sweetness, sprinkle cinnamon sugar on top before baking.
