Ingredients

- 2 cups sauerkraut, drained and chopped
- 8 ounces cream cheese, softened
- 1 cup shredded Swiss cheese
- 1 to 1.5 cups cooked and crumbled sausage or chopped ham
- 1 small onion, finely diced and cooked until soft (optional)
- 1 teaspoon garlic powder
- 1 teaspoon Dijon mustard (optional)
- Salt and pepper to taste
- Oil for frying
- For breading: flour, 2 beaten eggs, and breadcrumbs
Instructions
- Drain the sauerkraut well and squeeze out excess moisture.
- Mix cream cheese, shredded cheese, sausage or ham, onion (if using), and seasonings in a large bowl.
- Stir in the chopped sauerkraut until evenly mixed.
- Chill the mixture for at least 30 minutes.
- Roll into 1-inch balls and place on a tray.
- Bread in this order: flour, egg, breadcrumbs (repeat for extra crunch).
- Fry in 350°F oil until golden, usually 2 to 4 minutes. Drain on paper towels.
Notes
Make sure to squeeze the sauerkraut thoroughly to avoid a wet filling that falls apart.
