Description

A nostalgic and savory snack featuring creamy sauerkraut filling, breaded and fried to crispy perfection.


Ingredients

  • 2 cups sauerkraut, drained and chopped
  • 8 ounces cream cheese, softened
  • 1 cup shredded Swiss cheese
  • 1 to 1.5 cups cooked and crumbled sausage or chopped ham
  • 1 small onion, finely diced and cooked until soft (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon Dijon mustard (optional)
  • Salt and pepper to taste
  • Oil for frying
  • For breading: flour, 2 beaten eggs, and breadcrumbs

Instructions

  1. Drain the sauerkraut well and squeeze out excess moisture.
  2. Mix cream cheese, shredded cheese, sausage or ham, onion (if using), and seasonings in a large bowl.
  3. Stir in the chopped sauerkraut until evenly mixed.
  4. Chill the mixture for at least 30 minutes.
  5. Roll into 1-inch balls and place on a tray.
  6. Bread in this order: flour, egg, breadcrumbs (repeat for extra crunch).
  7. Fry in 350°F oil until golden, usually 2 to 4 minutes. Drain on paper towels.

Notes

Make sure to squeeze the sauerkraut thoroughly to avoid a wet filling that falls apart.
