Quick and addictive little bagel bites made using sourdough discard, perfect for busy mornings or snacks.


Ingredients

  • 1 cup sourdough discard (unfed)
  • 1 cup plain Greek yogurt (or thick plain yogurt)
  • 2 cups all-purpose flour, plus a little for the counter
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg (for egg wash, optional)
  • Toppings: everything bagel seasoning, sesame seeds, poppy seeds, or shredded cheese

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Add the sourdough discard and Greek yogurt. Stir with a spoon until it starts to clump, then use your hands to bring it together into a soft dough.
  4. Knead the dough for about 30 seconds to 1 minute on a lightly floured counter.
  5. Roll the dough into small balls, about 1 to 1.5 inches wide, yielding roughly 20 to 24 bites.
  6. Place them on the baking sheet, brush with beaten egg if desired, and sprinkle with toppings.
  7. Bake for 12 to 15 minutes, until puffed and lightly golden. Let cool for a couple of minutes before enjoying warm.

Notes

Use thick yogurt to prevent sticky dough. Adjust baking time if sizes vary.
