  • 100 grams water
  • 100 grams bread flour (for the starter)
  • 150 grams whole milk
  • 200 grams active sourdough starter
  • 75 grams softened butter
  • 50 grams brown sugar
  • 1 egg
  • Pinch of salt
  • 400 grams bread flour (for the dough)
  • 100 grams softened butter (for the filling)
  • 100 grams brown sugar (for the filling)
  • 5 grams cinnamon (about 2 teaspoons)

Instructions

  1. Prepare the sourdough starter by mixing 25 grams of starter with 100 grams of water and 100 grams of bread flour, and let it rise overnight.
  2. Combine in a big bowl 150 grams of whole milk, 200 grams of active sourdough starter, 75 grams of softened butter, 50 grams of brown sugar, one egg, and a pinch of salt.
  3. Mix until smooth, then add 400 grams of bread flour and stir to form a dough.
  4. Knead the dough on a floured surface for 8-10 minutes until supple and elastic.
  5. Cover the dough with a towel and let it rise for 4-8 hours until doubled in size.
  6. Refrigerate for 15-30 minutes.
  7. Make the filling by mixing 100 grams of softened butter, 100 grams of brown sugar, and 5 grams of cinnamon.
  8. Roll out the dough into a rectangle, spread the filling, and roll into a cylinder.
  9. Cut into 9 pieces and place in a buttered pan to rise until puffy.
  10. Bake in a preheated oven at 350°F (175°C) for about 35 minutes.
  11. Drizzle with glaze made from milk and powdered sugar after baking.

Notes

For best flavor, ensure the sourdough starter is active. You can customize the filling by adding nuts or chocolate chips.
