- 1 teaspoon vanilla extract

- 1/2 cup confectioner’s sugar
- 2 teaspoons Lemon Drop Seriously Delicious CBD
- 1/8 teaspoon vanilla extract (for glaze)
- 1 teaspoon water
- 2 tablespoons chopped candied ginger (for topping)
Instructions
- Preheat your oven to 400 degrees F. Grease or line a standard muffin tin.
- Whisk together the flour, baking powder, baking soda, ground ginger, salt, and sugar until well mixed.
- In another bowl, whisk together the eggs, milk, yogurt, coconut oil, and vanilla extract. If you’re feeling adventurous, add chopped candied ginger!
- Pour the wet mixture into the dry mixture and stir until just combined. Avoid overmixing.
- Bake for 18-20 minutes, or until the edges are slightly golden and a toothpick comes out clean.
- Let them cool completely before glazing.
- Beat together the confectioner’s sugar, CBD, water, and a touch of vanilla extract until smooth.
- Drizzle the glaze over the cooled muffins and sprinkle with chopped candied ginger while the glaze is wet.
