  • 1/2 cup granulated sugar
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the maple syrup, eggs, and vanilla extract until well combined.
  4. Mix together the oats, flour, baking soda, salt, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chopped pecans.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes or until the cookies are golden around the edges.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed fresh out of the oven when they’re still warm and slightly gooey. Store them in an airtight container at room temperature for up to a week.
