Ingredients

- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup chopped pecans
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and maple syrup in a large bowl.
- Add the egg and vanilla extract, mixing well.
- Combine the oats, flour, baking soda, cinnamon, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped pecans.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly browned.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to a week. Freeze for up to three months, separated by parchment paper.
