Ingredients

- 1 cup sourdough starter (discard or bubbly)
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup vegetable oil or melted butter
- 1 large egg
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix together the sourdough starter, sugar, milk, oil, and egg until smooth and creamy.
- Stir in the lemon zest and lemon juice for flavor.
- Whisk together the flour, baking soda, and salt in another bowl.
- Fold the dry ingredients into the wet mix until just combined.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Let them cool slightly in the pan before transferring to a wire rack.
Notes
For extra flavor, consider adding fresh blueberries or raspberries. You can also add poppy seeds for crunch!
