Ingredients

- 2 1/2 cups all-purpose flour
- 8 tablespoons unsalted butter (cold)
- 1/2 cup sourdough starter discard
- 1 cup buttermilk (or milk)
- 1 tablespoon sugar (optional)
- 1 teaspoon fine sea salt
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 425°F (220°C).
- Mix together the flour, baking powder, baking soda, salt, and sugar (if using) in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the sourdough starter and buttermilk until just combined.
- Turn out the dough onto a lightly floured surface and knead gently until it comes together.
- Roll or pat the dough to about 1-inch thickness.
- Cut out biscuits using a biscuit cutter.
- Place the biscuits on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until golden brown.
Notes
For extra flavor, consider adding herbs or cheese to the dough. Store leftovers in an airtight container for up to two days or freeze individually for later use.
