Fluffy and cheesy, these Sourdough Cheese Muffins are the perfect breakfast or snack, making great use of your sourdough starter.
Ingredients

- 2 cloves Garlic (Finely chopped)
- 50 g Butter (Melted)
- 200 g Sourdough Starter (Discard or Active Starter)
- 2 Eggs
- 60 g Vegetable Oil
- 100 g Milk
- 250 g Cheddar Cheese (Shredded)
- 150 g All Purpose Flour
- 12 g Baking Powder (2 tsp)
- 5 g Salt
- 2 tbsp Fresh Herbs (Finely chopped)
Instructions
- Preheat your oven to 180C/350F.
- Mix the melted butter and chopped garlic in a small bowl.
- Use a pastry brush to grease the muffin holes with the butter-garlic mixture.
- Combine the sourdough starter, eggs, milk, and vegetable oil in a larger bowl and whisk until smooth.
- Mix the shredded cheese, all-purpose flour, baking powder, salt, and fresh herbs in another bowl.
- Pour the liquid mixture into the dry ingredients and gently fold until just combined.
- Spoon the batter into the greased muffin holes.
- Bake for about 30 minutes, or until golden brown.
- Let the muffins cool on a rack for around 15 minutes.
Notes
For a twist, fold in some cooked bacon, spinach, or sun-dried tomatoes. Store in an airtight container for freshness.
