Description
A cozy and simple coffee cake made with sourdough starter and topped with crunchy pecan streusel.

- 2 tablespoons unsalted butter, cold
- 1/2 cup brown sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup chopped pecans
- 1 cup sourdough starter
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan.
- Mix together the streusel ingredients until crumbly. Set aside.
- Whisk together the sourdough starter, granulated sugar, milk, egg, and vanilla in another bowl.
- Combine the all-purpose flour, baking soda, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour half of the batter into the prepared cake pan, then sprinkle with half of the streusel mixture.
- Add the remaining batter on top, followed by the remaining streusel.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes before serving.
Notes
For best results, use cold butter for the streusel and don’t overmix the batter. Adding orange zest or stirring in chocolate chips can enhance flavor.
