Ingredients

  • 3/4 cups granulated white sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1/4 cup sourdough starter discard (room temperature)
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon water
  • 2 teaspoons corn starch
  • 3 tablespoons unsalted butter
  • 2 tablespoons corn syrup
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
  2. Make the Pecan Pie Filling: In a small bowl, combine cold water and cornstarch, stirring until smooth. Melt butter in a saucepan over low heat, then stir in chopped pecans, brown sugar, corn syrup, and vanilla. Cook for 1-2 minutes, then add cornstarch slurry and cook until thickened.
  3. Mix Wet Ingredients: In a large bowl, beat butter and sugar until light and fluffy. Add egg, vanilla extract, and sourdough starter; mix until combined.
  4. Add Dry Ingredients: In another bowl, whisk together flour, salt, and baking powder. Fold dry ingredients into wet mixture until dough is stiff.
  5. Shape the Cookies: Scoop 2 tablespoons of dough, roll into a ball, and place on baking sheet. Create a well and fill with pie filling and chopped pecans. Repeat.
  6. Bake for 13-15 minutes. Let cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Notes

These cookies can be frozen before baking; add extra time when baking from frozen.
