Description
Delightful Carrot Cake Whoopie Pies combine moist carrot cake flavors with rich cream cheese frosting, sandwiched between soft cookies.

- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup oatmeal
- 1/2 tsp salt
- 1 cup grated carrots
- 3/4–1 cup raisins
- 6 tbsp unsalted butter (for frosting)
- 8 oz cream cheese
- 2 cups powdered sugar
- 1 tsp vanilla (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking soda, baking powder, salt, and oatmeal in another bowl. Gradually mix this into the batter.
- Fold in the grated carrots and raisins until well combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
- Bake for about 12-15 minutes, or until the edges are golden. Remove from the oven and let cool.
- Beat together the cream cheese and butter until smooth for the frosting. Gradually add in the powdered sugar and vanilla, mixing until combined.
- Spread a generous amount of frosting on the flat side of one cookie, then top with another cookie. Enjoy!
Notes
These whoopie pies are best served fresh but can be refrigerated for up to a week or frozen for longer storage. Add nuts or spices for a twist!
