Description

Delicious homemade cherry jam that captures the essence of summer in a jar, perfect for spreading on bread or using in desserts.

Ingredients

Scale
  • 2 pounds (900g) sweet or sour cherries (or a mix)
  • 2 1/2 cups (500g) sugar
  • Freshly squeezed juice of one medium lemon
  • 12 drops of almond extract

Instructions

  1. Start by removing the stems and pits from the cherries.
  2. Toss the cherries into a large non-reactive pot. If you have sweet cherries, add 2-3 tablespoons of water.
  3. Cover the pot and cook over medium heat, stirring occasionally until the cherries soften, about 10 minutes.
  4. Once the cherries are wilted, remove the lid and stir in the sugar and lemon juice.
  5. Crank up the heat to medium-high and keep stirring until the mixture thickens.
  6. Finally, stir in a drop or two of almond extract and ladle the jam into clean jars.

Notes

Use ripe cherries for the best flavor and consider adding a pinch of cinnamon for an extra twist.
