- 2 1/2 c all purpose flour
- 3 T sugar
- 1 T baking powder
- 1 tsp kosher salt
- 1 stick (1/2 c) cold unsalted butter, cut into cubes
- 1/4 c heavy whipping cream (cold, plus more for brushing)
- 1/2 c vanilla Greek Yogurt (cold)
- 1 large egg (cold)
- 1 tsp pure vanilla extract
- 1 c semisweet chocolate chips
- 1/3 c cherry jam
Instructions
- Preheat the oven to 375 degrees F.
- Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
- Add cold butter cubes and cut into the flour until it resembles coarse crumbs.
- Whisk together cold heavy cream, vanilla Greek yogurt, and cold egg in a small measuring cup.
- Create a well in the dry ingredients and pour in the cream mixture, folding until just combined.
- Fold in chocolate chips.
- Dust a work surface with flour and knead the dough gently.
- Divide the dough into two halves and roll each into an 8-inch circle.
- Line a baking sheet with parchment paper and place one dough round on it.
- Spread cherry jam over the first round, leaving a 1/2-inch border.
- Place the second round on top and pinch edges to seal.
- Brush the top with cold heavy cream and sprinkle with coarse sugar.
- Bake for 27-30 minutes until golden brown.
- Let cool for about 10 minutes, then slice into 8 wedges.
Notes
Store leftovers in an airtight container for up to 2 days at room temperature or in the fridge for a week.
