Delicious and easy-to-make scones filled with chocolate chips and cherry jam, perfect for a cozy breakfast or afternoon treat.


Ingredients

  • 2 1/2 c all purpose flour
  • 3 T sugar
  • 1 T baking powder
  • 1 tsp kosher salt
  • 1 stick (1/2 c) cold unsalted butter, cut into cubes
  • 1/4 c heavy whipping cream (cold, plus more for brushing)
  • 1/2 c vanilla Greek Yogurt (cold)
  • 1 large egg (cold)
  • 1 tsp pure vanilla extract
  • 1 c semisweet chocolate chips
  • 1/3 c cherry jam

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Add cold butter cubes and cut into the flour until it resembles coarse crumbs.
  4. Whisk together cold heavy cream, vanilla Greek yogurt, and cold egg in a small measuring cup.
  5. Create a well in the dry ingredients and pour in the cream mixture, folding until just combined.
  6. Fold in chocolate chips.
  7. Dust a work surface with flour and knead the dough gently.
  8. Divide the dough into two halves and roll each into an 8-inch circle.
  9. Line a baking sheet with parchment paper and place one dough round on it.
  10. Spread cherry jam over the first round, leaving a 1/2-inch border.
  11. Place the second round on top and pinch edges to seal.
  12. Brush the top with cold heavy cream and sprinkle with coarse sugar.
  13. Bake for 27-30 minutes until golden brown.
  14. Let cool for about 10 minutes, then slice into 8 wedges.

Notes

Store leftovers in an airtight container for up to 2 days at room temperature or in the fridge for a week.
