- 4 tablespoons unsalted butter
- 1⅓ cup water
- 1 tablespoon sugar
- 1 packet dry active yeast (1 packet = 7 g or 2¼ teaspoons)
- 4 cups all-purpose flour
- 1½ teaspoon salt
- ½ cup sourdough starter
- 4 cups water
- ¼ cup baking soda
- 4 tablespoons melted butter
- ⅔ cup sugar
- 2 teaspoons cinnamon
Instructions
- Start by melting the butter in a medium saucepan over low-medium heat.
- Stir in 1⅓ cup water and the sugar.
- Bring this mixture to about 105℉, making sure it doesn’t go over 110℉.
- Add the yeast and let it rest for about 5-10 minutes to activate.
- Grab a bowl of your stand mixer and add the flour, salt, sourdough starter, and your warm water mixture.
- Mix on low speed for about 7 minutes until a dough forms.
- Cover the bowl with plastic wrap or a damp towel and let it rest for about 40 minutes.
- Prepare the baking soda bath by bringing 4 cups of water and the baking soda to a boil in a pot.
- Roll and cut the dough into bite-sized pieces.
- Drop the pretzel bites into the boiling water for about 30 seconds.
- Coat them in the cinnamon sugar mixture made from ⅔ cup sugar and 2 teaspoons cinnamon.
Notes
These pretzel bites are excellent warm and can be paired with dipping sauces like cream cheese frosting or chocolate sauce. For a savory option, skip the cinnamon and sugar and use sea salt and garlic powder instead.
