Ingredients

Scale
  • 500g bread flour
  • 375g water
  • 100g sourdough starter
  • 10g salt

Instructions

  1. Combine bread flour and water in a mixing bowl. Mix until there are no dry spots. Let it rest for 30 minutes (this is called autolyse).
  2. Add the sourdough starter and salt to the dough. Mix until well incorporated.
  3. Knead the dough for about 10 minutes until it becomes smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover, and let it rise at room temperature for 4-6 hours, or until it has doubled in size.
  5. Turn the dough out onto a floured surface and shape it into a round loaf. Let it rest for 30 minutes.
  6. Preheat your oven to 450°F (230°C).
  7. Place the dough in a Dutch oven or on a baking sheet lined with parchment paper. Score the top of the loaf with a sharp knife.
  8. Bake covered for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
  9. Let the bread cool on a wire rack before slicing.

Notes

Store your sourdough at room temperature in a paper bag or a bread box. Consider freezing if not consumed within a few days.
