Delightfully chewy bagels made with sourdough starter, perfect for breakfast or snacks.
Ingredients

- 1 cup + 1 tablespoon lukewarm water (245g)
- 1 cup sourdough starter (100g)
- 2 tablespoons honey (40g)
- 12 g kosher salt
- 500 grams unbleached all-purpose flour
- Toppings: sesame seeds, everything bagel seasoning, poppy seeds, coarse salt
- 8 cups water
- 2 tablespoons honey
- 1 tablespoon baking soda
Instructions
- Combine the water, sourdough starter, and honey in a large mixing bowl, then whisk to dissolve.
- Add the flour and salt; mix until a stiff dough forms.
- Cover with a damp towel and let sit for 20-30 minutes.
- Knead the dough for about 5 minutes, then let it proof for 10-12 hours at room temperature.
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Divide the dough into 8 pieces, shape them into bagels, and let rise for 45-60 minutes.
- Boil the water with honey and baking soda.
- Boil the bagels for 30 seconds on each side.
- Place back on the baking sheet, add toppings, and bake for 25-30 minutes until golden brown.
Notes
Store bagels in an airtight container at room temperature for up to three days or freeze for longer storage.
