Ingredients

Scale

For the Dough:

  • 1 cup all-purpose flour

  • 1/2 cup sourdough discard (unfed, room temperature)

  • 1/4 cup water (plus 12 tablespoons more if needed)

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon dried oregano or Italian seasoning

  • 1/4 teaspoon baking powder

For the Topping:

  • 1 tablespoon melted butter or olive oil

  • 12 garlic cloves, minced

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • Optional: chopped parsley or red pepper flakes for garnish

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, mix the flour, sourdough discard, water, olive oil, salt, garlic powder, oregano, and baking powder until a soft dough forms. Add a splash more water if the dough feels dry.

  3. Transfer the dough to the prepared baking sheet and press it into a rectangle or oval about 1/4-inch thick.

  4. Brush the dough with melted butter or olive oil. Sprinkle the minced garlic, mozzarella, and Parmesan evenly over the top.

  5. Bake for 12–15 minutes, or until the edges are golden and the cheese is bubbly and slightly browned.

  6. Let cool for a few minutes, then slice into breadsticks with a pizza cutter or knife. Garnish with parsley or red pepper flakes if you like. Serve warm and enjoy!

Notes

  • If you don’t have mozzarella, swap in cheddar, Monterey Jack, or any melty cheese you love!

  • For a gluten-free version, use a 1:1 gluten-free flour blend (results may vary slightly).

  • These breadsticks freeze well! Just reheat in the oven at 350°F until warm and crispy again.

  • Freshly minced garlic brings the best flavor, but garlic powder can be used in a pinch.
