- 2 cups unbleached all-purpose flour

- 2 cups buttermilk or sour milk (2 cups milk + 2 tsp. cider vinegar)
- 1/2 cup sourdough starter, unfed/discard
- All of the prepared sourdough sponge
- 2 large eggs
- 2 tablespoons all-purpose flour
- 2 tablespoons vegetable oil or melted butter
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup grated cheese (Gruyere, gouda or sharp cheddar)
Instructions
- Whisk together the unbleached all-purpose flour, granulated sugar, and salt in a large bowl.
- Mix the buttermilk or sour milk with the unfed sourdough starter, eggs, and vegetable oil or melted butter in another bowl.
- Combine the wet ingredients with the dry ingredients, stirring until just combined.
- Fold in the grated cheese gently.
- Preheat your waffle iron.
- Pour the batter into the waffle iron and cook according to the manufacturer’s instructions until golden brown and crispy.
- Serve warm, preferably with Boursin cheese, alongside your choice of steaks, chicken, or fish.
Notes
Consider experimenting with different types of cheese or add herbs to the batter for extra flavor. Leftovers can be stored in an airtight container in the fridge for 2-3 days.
