Description
A delightful homemade sourdough pizza crust that enhances every bite with a hint of tang.
Ingredients
Scale
- 375 g water
- 100 g sourdough starter, active and bubbly
- 10 g salt
- 500 g all-purpose or bread flour
- 2 tablespoons tomato sauce
- 1 to 2 oz mozzarella
- Handful of grated Parmigiano Reggiano
- Drizzle of olive oil
- Pinch of sea salt
- Extra-virgin olive oil
- A couple of handfuls of baby or Tuscan kale
- 1 to 2 cloves garlic
- Sea salt, such as Maldon
- 2 tablespoons crème fraîche
- Grated Parmigiano Reggiano, about 1/4 to 1/3 cup
- 1/4 cup olive oil
- 1/4 cup minced scallions or ramps
- 1 teaspoon crushed red pepper flakes
Instructions
- Place the starter, salt, and water in a large bowl. Stir to combine.
- Add the flour and mix until incorporated.
- Transfer to a straight-sided vessel, cover, and let it stand for 30 minutes.
- Pull the dough up and into the center, turning the vessel quarter turns, and repeat this 8 to 10 times.
- Cover and let it rest for another 30 minutes, then repeat stretching and folding twice more.
- Cover the vessel and set aside to rise at room temperature for 4 to 18 hours until it has roughly doubled in volume.
- Turn the dough out onto a work surface and shape into a ball.
- Divide into 4 portions and shape each into a ball.
- Transfer to containers and refrigerate for at least 6 hours or freeze for up to 1 week.
- Pull out a round of dough from the fridge and let sit for 1 hour.
- Preheat the oven to 550ºF with a Baking Steel in place.
- Shape the dough into a round, place on a parchment-lined peel, and top as desired.
- Bake in the preheated oven until golden.

Ensure your sourdough starter is active and bubbly for best results. Experiment with different toppings and flour types to customize your pizza crust.
