  3. Pull the dough up and into the center, turning the vessel quarter turns, and repeat this 8 to 10 times. Cover and let it rest for another 30 minutes, then repeat stretching and folding twice more.
  4. Cover the vessel and set aside to rise at room temperature for 4 to 18 hours until it has roughly doubled in volume.
  5. Turn the dough out onto a work surface and shape into a ball. Divide into 4 portions and shape each into a ball. Transfer to containers and refrigerate for at least 6 hours or freeze for up to 1 week.
  6. Pull out a round of dough from the fridge and let sit for 1 hour. Preheat the oven to 550ºF with a Baking Steel in place.
  7. Shape the dough into a round, place on a parchment-lined peel, and top as desired. Bake in the preheated oven until golden.
