- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon cornstarch
- 3 tablespoons lemon juice
- 1 cup all-purpose flour

- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 6 tablespoons cold unsalted butter, cut into cubes
- 1 cup unfed sourdough starter (cold)
- Coarse or turbinado sugar, for topping (optional)
- Whipped cream or vanilla ice cream, for serving (optional)
Instructions
- Preheat your oven to 400°F. Coat your skillet with butter or cooking spray.
- Combine the blueberries, sugar, cinnamon, cornstarch, and lemon juice in a medium bowl. Pour this mixture into the skillet and spread evenly.
- Bake the blueberries for about 10 minutes until bubbling.
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a separate bowl.
- Rub in the cold butter until the mixture resembles coarse meal.
- Stir in the cold sourdough starter until just combined.
- Drop spoonfuls of the biscuit batter evenly over the blueberry mixture.
- Sprinkle with coarse or turbinado sugar if desired and return to the oven.
- Bake for an additional 19-21 minutes, until the biscuits are golden and fluffy.
- Cool for 5 minutes before serving warm with whipped cream or ice cream.
Notes
For added flavor, incorporate lemon zest into the blueberry mixture or mix in other berries like raspberries or blackberries.
