- 2/3 cup milk (2% or whole)
- 2 tablespoons unsalted butter
- 1 large egg
- ½ cup sourdough starter discard (100 g, fed within past 36 hours)
- 2 tablespoons granulated sugar
- 2 ½ cups all-purpose flour
- ½ teaspoon salt
- ¼ cup unsalted butter (very soft)
- 2/3 cup dark brown sugar (packed)
- 4 teaspoons cinnamon
- ½ teaspoon nutmeg
- 1/8 teaspoon allspice
- ¼ cup unsalted butter (room temperature)
- 2 ounces cream cheese (room temperature)
- ½ teaspoon vanilla
- Pinch salt
- ½ cup powdered sugar (plus more for topping if desired)
Instructions
- Combine 2/3 cup of milk and 2 tablespoons of unsalted butter in a bowl and warm until the butter melts.
- Whisk together the egg and sourdough starter in another bowl. Add the milk mixture to the egg mixture and stir well.
- Mix the granulated sugar, all-purpose flour, and salt in a large bowl. Gradually combine with the wet ingredients to form a dough.
- Knead the dough on a floured surface until smooth. Let it rise until doubled in size, about 60-120 minutes.
- Make the filling by mixing the soft butter, dark brown sugar, cinnamon, nutmeg, and allspice in a bowl.
- Roll out the risen dough into a rectangle and spread the filling evenly over it.
- Roll up the dough tightly and cut into rolls. Place rolls in a greased baking pan and let rise again until puffed.
- Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden.
- Beat cream cheese, room temperature butter, vanilla, and powdered sugar in a bowl for the frosting. Add enough milk to achieve desired consistency.
- Spread the frosting over warm rolls and serve.
