Description

Delicious sourdough cinnamon rolls filled with sweet spices, perfect for breakfast or a sweet treat.


Ingredients

  • 2/3 cup milk (2% or whole)
  • 2 tablespoons unsalted butter
  • 1 large egg
  • ½ cup sourdough starter discard (100 g, fed within past 36 hours)
  • 2 tablespoons granulated sugar
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ cup unsalted butter (very soft)
  • 2/3 cup dark brown sugar (packed)
  • 4 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1/8 teaspoon allspice
  • ¼ cup unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • ½ teaspoon vanilla
  • Pinch salt
  • ½ cup powdered sugar (plus more for topping if desired)

Instructions

  1. Combine 2/3 cup of milk and 2 tablespoons of unsalted butter in a bowl and warm until the butter melts.
  2. Whisk together the egg and sourdough starter in another bowl. Add the milk mixture to the egg mixture and stir well.
  3. Mix the granulated sugar, all-purpose flour, and salt in a large bowl. Gradually combine with the wet ingredients to form a dough.
  4. Knead the dough on a floured surface until smooth. Let it rise until doubled in size, about 60-120 minutes.
  5. Make the filling by mixing the soft butter, dark brown sugar, cinnamon, nutmeg, and allspice in a bowl.
  6. Roll out the risen dough into a rectangle and spread the filling evenly over it.
  7. Roll up the dough tightly and cut into rolls. Place rolls in a greased baking pan and let rise again until puffed.
  8. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden.
  9. Beat cream cheese, room temperature butter, vanilla, and powdered sugar in a bowl for the frosting. Add enough milk to achieve desired consistency.
  10. Spread the frosting over warm rolls and serve.
